Homemade Healthy Banana Waffles have a soft fluffy inside with a slightly crunchy exterior. These waffles have a hint of sweetness from the overripe bananas. Ingredients
Dry Ingredients
1cupall purpose flour
¾cupwhole wheat flour
1tablespoon baking powder
½teaspoon salt
Wet Ingredients
2ripe bananas
2eggs, separated
2tablespoons butter, melted
2teaspoonsvanilla extract
2tablespoonshoney
½cupalmond milk
Instructions
In a mixing bowl mash bananas and add all wet ingredients except egg whites. Mix well and set bowl aside.
In another bowl add dry ingredients and whisk with a fork.
Pour the wet ingredients and mix with the dry. It will not fully mix until you add the whites.
In a small bowl beat egg whites to form stiff peaks.
Gently mix the beaten egg whites into the batter using a spatula. you may see streaks of whites and this is okay. it is important to not over mix because this gives the waffle a fluffy interior.
Heat waffle iron and wait for indicator light to come on. When hot spray with cooking spray.
Use a ½ cup measuring cup to portion and pour batter onto hot waffle iron.
When finished waffle maker will beep. Carefully remove and repeat process.
Plate waffles with extra bananas, maple syrup, honey or butter.
