Ingredients

Wet Ingredients

  • 3 medium ripe bananas, mashed
  • cup honey
  • 2 eggs
  • ½ cup Greek yogurt
  • 2 teaspoon vanilla extract
  • 2 tablespoons avocado oil

Dry Ingredients

  • 1 cup oat flour, *see notes
  • 1 cup old fashion oats
  • 1 cup whole wheat flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoon baking powder

Instructions

  • Start by preheating your oven to 350 degrees. Spray a bread or loaf pan with cooking spray. Set aside.
  • Set aside. In a large bowl mash bananas with a fork. Add the rest of the wet ingredients, mixing well. Set bowl aside.
  • In a separate bowl mix dry ingredients. *See notes for oat flour. Mix well.
  • Make a well in the center of the dry ingredients and pour wet mixture into bowl. Using a spatula stir using large circular motion, scraping sides of bowl.
  • Mix just until there are no streaks of flour. The batter will be a little lumpy but that’s of.
  • Pour batter in prepared loaf pan. Bake for 35 minutes or until toothpick comes out clean.

Notes

You can easily make your own oat flour by pulsing oats in a blender until it breaks down into a dry powder, like the consistency of flour.  This takes about 30 seconds.
