Ingredients
Lemon Vinaigrette Dressing
1lemon, juiced
2 large basil leaves
6 tablespoonsolive oil
4tablespoonswhite balsamic vinegar
salt and pepper to taste
Salad
2cucumbers, peeled and sliced
1pint cherry tomatoes, halved
1red pepper diced
1yellow pepper diced
1can of corn, drained and rinsed
12ouncesdeli turkey, thickly sliced and cubed*
3ouncessharp cheddar cheese, cubed
Instructions
Add all vinaigrette ingredients to a blender and pulse to combine.
Chop all vegetables, turkey and cheese and add to a large bowl with drained corn.
Drizzle desired amount of dressing to salad.
Notes
*I ask the deli clerk at my local grocery store to slice a ½ inch thick slice of my favorite turkey. The weight will vary depending on the slice so you may need to get a couple slices.
