Fresh Summer Veggie Salad with Lemon Vinagrette

A fresh veggie summer salad with a lemon vinaigrette is ready and on the table in 15 minutes! No cooking required, simply chop and blend dressing!

Ingredients

Lemon Vinaigrette Dressing

  • 1 lemon, juiced
  • 2 large basil leaves
  • 6 tablespoons olive oil
  • 4 tablespoons white balsamic vinegar
  • salt and pepper to taste

Salad

  • 2 cucumbers, peeled and sliced
  • 1 pint cherry tomatoes, halved
  • 1 red pepper diced
  • 1 yellow pepper diced
  • 1 can of corn, drained and rinsed
  • 12 ounces deli turkey, thickly sliced and cubed*
  • 3 ounces sharp cheddar cheese, cubed

Instructions

  • Add all vinaigrette ingredients to a blender and pulse to combine.
  • Chop all vegetables, turkey and cheese and add to a large bowl with drained corn.
  • Drizzle desired amount of dressing to salad.

Notes

*I ask the deli clerk at my local grocery store to slice a ½ inch thick slice of my favorite turkey.  The weight will vary depending on the slice so you may need to get a couple slices.
