Apple Raisin Pecan Muffins

These healthy apple raisin pecan muffins are easy to whip up for breakfast and have the perfect combination of fall flavors!

Ingredients

  • 1 large apple, grated with peels
  • cup apple butter
  • cup apple sauce
  • 1 egg
  • cup pure maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup raisins
  • ½ cup chopped pecans
  • 1 ¼ cup old-fashioned oats
  • ¾ cup whole wheat flour
  • ½ cup all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  • Preheat oven to 350 degrees.
  • Spray muffin tin with cooking spray, set aside.
  • In a large mixing bowl mix all wet ingredients together grated apples, apple butter, apple sauce, egg, maple syrup, vanilla, and raisins.
  • In another bowl mix all of the dry ingredients oats, flours, baking powder, baking soda, salt, cinnamon and pecans.
  • Using a spatula, slowly add the dry ingredients to the wet ingredients until incorporated being careful not to overmix.
  • Divide evenly into 12 pan muffin tin. Bake for about 18-20 minutes or until toothpick comes out clean.
