- 2 very ripe bananas, mashed
- ¼ cup honey
- 2 tablespoons coconut oil
- 1 egg
- ¼ cup natural peanut butter
- 1 cup almond milk
- 1 teaspoon vanilla extract
- 2 cups old fashion oats
- ¼ teaspoon cinnamon
- ¼ teaspoon salt
- ¼ cup chocolate chips
Preheat oven to 375 degrees. Spray baking dish with cooking spray and set aside.
In a large bowl mash bananas with a fork and add honey, coconut oil, egg, peanut butter, almond milk and vanilla extract. Stir very well.
In the same bowl add oats, cinnamon, salt and chocolate chips. Stir everything well and pour into prepared baking dish.
Bake in preheated oven for 30 minutes.
Remove from oven and allow the oatmeal to cool for 10 minutes before cutting.
