Chicken Quinoa Kale Soup

Chicken Quinoa Kale Soup is a healthy dinner that can be made in just 35 minutes.  Not only is this a delicious soup recipe it reheats wonderfully for great leftovers!

Ingredients

  • 1 cup celery, chopped
  • 1 cup carrots, peeled and chopped
  • ½ cup onion, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 6 cups low sodium chicken broth
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • salt and pepper to taste
  • 1 cup quinoa
  • 2 cups baby kale, stems removed
  • 2 cups cooked chicken *I used rotisserie

Instructions

  • Place large pot over medium heat. Add tablespoon of olive oil.
  • Chop celery, carrots and onion and add to pot. Stir occasionally watching onions to not burn. Once vegetables have become tender about 10 minutes-add garlic and stir for an additional minute.
  • Add chicken broth and spices and bring to a boil.
  • Once boiling add quinoa, reduce to a simmer and cover for 10 minutes.
  • After 10 minutes add kale and chicken and cook for an additional 5 minutes.
  • Ladle into bowls and serve immediately.

Notes

* Chicken Quinoa Kale Soup makes wonderful leftovers.  You may need an extra splash of chicken broth or water if the quinoa continues to absorb the liquid.  Warm in microwave or on stovetop.
