- 1 pound chicken tenders
- 2 teaspoons baking soda
- 1 teaspoon paprika
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon dried thyme leaves
- ½ teaspoon oregano
- ⅛ teaspoon cayenne pepper
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- 2 tablespoons butter
Add the chicken tenders to a bowl and coat with baking soda. Let the chicken sit for 20 minutes while preparing the spice mixture. *See Notes
After 20 minutes rinse the chicken tenders to remove the baking soda. Pat the chicken dry with a paper towel and rub with the spice mixture on both sides
Heat a cast iron skillet over medium-high heat. Add the butter to the skillet. Once the butter is melted add the chicken and cook on each side for 4-5 minutes or until the internal temperature reaches 165 degrees Fahrenheit. Serve hot chicken immediately.
*Using baking soda to tenderize the chicken is actually a method called velveting and it is a common method used in Asian cuisine. This gives the chicken a very tender texture, however if you are short on time you can skip this step.
*Store leftover chicken tenders in an airtight container for up to 4 days. To reheat the blackened chicken tenders, wrap in foil allowing a small opening for steam and place in a preheated 350 degree oven until the chicken reaches 165 degrees Fahrenheit.
If you are short on time you can always microwave on medium power for 1-2 minutes.
