Easy Vegan Chia Pudding With Oat Milk

Equipment

  • mason jars

Ingredients

  • 6 tablespoons chia seeds (this makes the pudding very thick)*see notes
  • 1 cup oat milk
  • 1 tablespoon agave syrup
  • pinch of salt
  • drop almond extract

Instructions

  • Add 2-3 tablespoons of chia seeds to 2 serving containers. *see notes
  • Pour a half a cup of oat milk to each container.
  • Add a half a tablespoon of agave syrup, pinch of salt and a drop of almond extract to each serving. Stir well. Chia has a tendency to clump so stir and break up any clumps.
  • Cover and refrigerate for at least 2 hours or overnight so the chia can absorb the oat milk, making a pudding like consistency.
  • When ready to serve garnish with toppings of choice.

Notes

I have read that certain brands of chia absorb better than others (it could also depend on the freshness of the seeds).  I have found that 2 tablespoons did not make the pudding thick enough to add toppings.  You may want to start at 2 tablespoons and check the consistency and add an additional teaspoon or two if you are unsure and never made chia pudding before.
