Ingredients

  • cup honey
  • ¼ cup Greek yogurt
  • ½ cup apple sauce
  • 2 tablespoons almond butter
  • 1 large egg
  • ¼ cup coconut oil
  • 1 cup almond milk
  • 1 teaspoon vanilla extract
  • 2 cups old fashioned oats
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup chocolate chips

Instructions

  • Preheat oven to 350 degrees Fahrenheit. Lightly spray a baking dish with cooking spray and set aside.
  • In a large bowl mix together the honey, Greek yogurt, apple sauce, almond butter and egg. Pour in the melted coconut oil, almond milk and vanilla extract.
  • Add the oats, baking powder, salt and chocolate chips to the wet ingredients and stir to coat the oats. The mixture will be very runny.
  • Pour the batter into the prepared baking dish. Bake in preheated oven for 40 minutes. Baked oatmeal has finished baking when liquid has absorbed and is firm when checked with toothpick. It will be golden brown on top.
  • Cool for 10 minutes before slicing and enjoy warm with milk drizzled over top or extra honey.

Notes

Baked oatmeal is the perfect make ahead meal. Allow the baked oats to cool to room temperature. Store leftovers in an airtight container in the refrigerator for 3-4 days. Warm in the microwave for 60-90 seconds.
