Ingredients

  • 3 cups grape tomatoes
  • 8 ounce package mushrooms, sliced white button or baby Bella
  • cup olive oil
  • ¼ teaspoon salt
  • ½ teaspoon cracked black pepper
  • 8 ounce block feta cheese
  • 1 cup loosely packed baby spinach leaves, chopped
  • 2 tablespoons basil, fresh chopped
  • 16 ounce package gnocchi

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • In a large baking dish place tomatoes and mushrooms. Pour olive oil over the vegetables and stir to coat. Sprinkle with salt and pepper.
  • Clear a space for the block of feta cheese in the center of the vegetable mixture.
  • Bake in preheated oven for 30 minutes.
  • While tomatoes and mushrooms are roasting, bring a pot of water to a boil and cook gnocchi according to package directions.
  • When the vegetables are finished roasting after 30 minutes, the tomatoes will be soft and blistered.
  • Stir in the chopped spinach and basil. The heat will wilt the leaves. Use your spoon to break up the melty block of feta cheese.
  • Add the cooked gnocchi to the dish and stir to coat everything in cheese.
