Healthy Chocolate Baked Oats

- 2 overly ripe bananas, mashed
- 1 egg
- 1 cup almond milk
- 3 tablespoons coconut oil, melted
- ⅓ cup honey
- 2 teaspoons vanilla extract
- 2 cups old fashion oats
- ¼ teaspoon salt
- ¼ cup cocoa powder
- ¼ cup chocolate chips
Preheat oven to 375 degrees. Spray 8x8 baking pan with cooking spray.
In a large bowl mash the bananas with a fork.
Add the egg, milk, coconut oil, honey and vanilla extract. Stir well to incorporate all ingredients.
Add the oats, cocoa powder, salt and chocolate chips.
Stir well and use a spatula to scrape oat mixture into an 8x8 baking dish.
Spread evenly into dish and place in preheated oven. Bake for 25 minutes or until oatmeal is set and no longer runny.
Allow to cool for 10 minutes before serving. Top with additional chocolate chips, fresh fruit or milk.
