Avocado Everything Bagel with Egg Whites

Avocado bagels are one of my favorite breakfasts!  These toasted bagels are spread with creamy avocado, thin slices of tomato and egg whites for that extra protein boost.  Make this easy recipe a great addition to your morning routine!

Ingredients

  • 1 avocado
  • 2 everything bagels
  • ½ cup egg whites
  • 2 tomatoes, sliced thin
  • ¼ teaspoon salt
  • teaspoon cracked black pepper

Instructions

  • Heat a small skillet over medium heat. Once warm spray with non stick cooking spray and add egg whites. Use a spatula to stir egg whites while cooking.
  • While skillet is warming and egg is cooking, cut avocado in half and remove the pit. Scoop the avocado into a bowl.
  • Sprinkle ⅛ teaspoon of salt over the avocado and mash with a fork.
  • Toast bagel and spread bottom half with mashed avocado. Add egg whites and tomato slices. Sprinkle with remaining salt and pepper.
