Vitamix Roasted Butternut Squash Soup

Roast and blend for a smooth creamy soup. 

The ingredients: butternut squash heavy cream broth onion garlic sage leaves salt \pepper

Start by cutting the squash and onion and placing them on the baking tray along with the garlic and sage.  Drizzle with olive oil.

Roast the squash for 40 minutes.  You will need to remove the sage and onion earlier

Scoop the flesh of the squash away from the skin with a  spoon.  

Add everything to the Vitamix.  

Blend for 30 seconds to a minute or until creamy and smooth.   

Pour into serving bowls.  Garnish with a swirl of cream, cracked pepper and sage.
