Strawberry  Cupcakes

A delicious cupcake using fresh spring fruit!

Mix the flour, baking soda and salt. 

In a separate bowl cream the butter sugar and vegetable oil together. 

Add the egg and vanilla extract. 

Add in a half cup of diced strawberries into the batter . 

Add the flour and the buttermilk to the butter mixture. 

Fill the cupcake liners 3/4 of the way full. 

Cool cupcakes on a cooling rack before frosting.

Reduce a 1/4 cup of strawberries for the frosting.  It is important to get as much liquid out as possible. 

Cream the room temperature cream cheese and butter.  

Add the powdered sugar and the strawberries. 

Fill the cupcakes with diced strawberries and pipe with frosting. 

The cupcakes are moist, sweet and full of strawberries!

They are perfect for a bridal shower, Mother's Day or Valentine's Day!
