Slow Cooker Chicken and Corn Soup A warm bowl of soup is a comforting meal when the weather gets a little cooler!  

 

Add all of the ingredients to the slow cooker and cook for 4 hours on high or 6-8 hours on low. 

 

Remove the chicken from the slow cooker when it is finished cooking

 

Shred the chicken with 2 forks.  Add half and half and return the chicken to the slow cooker.  

 

By using an emulsion blender to puree a few of the vegetables it gives the soup a very creamy texture without lots of cream.   

 

This soup is loaded with healthy vegetables and lots of chicken for a healthy meal!

 

This is a quick dinner to prep and let the slow cooker do all the work!
