Roasted Green Beans and Carrots Make this easy side dish for a weeknight dinner or for the holidays!  

 

Ingredients needed: -carrots -green beans -olive oil -salt -pepper -garlic -shallot -parsley -lemon juice -almonds

 

Start by adding the chopped carrots and green beans to a baking sheet.  Drizzle with olive oil and roast for 30 minutes at 425.

 

After the first 15 minutes, stir the veggies and add the shallot and the garlic.  Coat with olive oil and return to the oven. 

 

The veggies will be tender but still have a little crunch after roasting for 30 minutes.  

 

Add the veggies to a platter and garnish with almonds and a squeeze of lemon juice.

 

Make these any time of the year and roasted green beans and carrots are perfect for the holidays.
