Oven Roasted Spaghetti Squash

This is a low carb alternative to pasta.   

Ingredients Needed

Carefully cut the squash in half with a sharp knife. 

Scrap the seeds out with a spoon.  

Brush the flesh of the squash with olive oil. 

Flip the cut sides of the squash onto a parchment lined baking sheet. 

Roast in a 400° F for 40 minutes. 

The squash will shred into spaghetti strands with a fork. 

Use this as a side dish with meatballs, chicken or seafood!
