No-Bake Pumpkin Cheesecake Bars These mousse like bars have the perfect pumpkin and are the perfect Thanksgiving dessert.   


Ingredients: –cream cheese -pumpkin puree –heavy cream -brown sugar -sugar -gingersnaps -butter –vanilla extract –cinnamon -allspice


Pulse the gingersnap cookies in a food processor.  


Mix the cookie crumbs, melted butter and sugar to make the crust. 


Spread the mixture into a 13 x 9 inch dish. Press tightly to form the crust. 


Place crust in freezer while making the pumpkin filling.


Whip the cream to form still peaks. 


Set the whipped cream aside and beat the cream cheese until smooth.   


Add the pumpkin and sugars to the cream cheese.


Gently mix in the whipped cream. 


I use a spatula so that I don't deflate the whipped cream. 


Spread over the crust and refrigerate for 6-8 hours.


Cut into 20 bars and serve with extra whipped cream.
