Mushroom Truffle Risotto

Risotto is an Italian dish that is creamy and rich with lots of parmesan cheese.


 Start by sauteing the shallots and mushrooms in olive oil and butter.  


When they are soft add the arborio rice.      


Stir to coat the rice in the olive oil and butter.      

Then add a cup of white wine.  They key to making a creamy risotto is stirring constantly.  


After the wine has absorbed add a ladle of warm broth.  Repeat this process while stirring.      

Once all of the broth has absorbed it is time to add the parmesan and truffle spread.    

You can serve this with seared scallops or on its own.
