Low Calorie Mashed Potatoes  

Make a low calorie mashed potato recipe by adding cauliflower to the mash!

 

Ingredients: – potatoes – cauliflower – butter – goat cheese – thyme  – salt –pepper

 

Always start your potatoes in cold water.  They will cook better and more evenly.

 

When the water for the potatoes comes to a boil, then add the cauliflower.  

 

This is important because cauliflower cooks faster than potatoes and you do not want to over cook the cauliflower. 

 

Mash with a hand mixer or a potato masher.  

 

I love adding goat cheese because it is creamy and tangy.   

 

Add to a serving bowl and sprinkle with thyme. 

 

This would be a healthy side dish to serve for Thanksgiving!
