Gluten-Free Lemon Cookies

Enjoy these delicious almond flour lemon cookies while eating a gluten free diet.  


–almond flour –baking soda –cornstarch –salt –butter –sugar – zest of 1 lemon –lemon juice –vanilla extract –powdered sugar –lemon juice

Zest the whole lemon.  Only remove the bright yellow part of the peel.  

Cut the lemon in half and squeeze the juice into a bowl.  

Cream together the butter and the sugar.

Add the egg, zest and lemon juice.   

Add the flour mixture and mix just until the dough comes together.  


Chill the dough and then make dough balls using a cookie scoop.  

Bake in a 350 degree oven for 12 minutes. 

These cookies have a delicious lemon flavor.  

They are soft and chewy cookies!
