Lemon Blueberry Cake 

This light lemony cake is perfect for special occasions. 

Ingredients:  -flour -baking powder -salt -vegetable oil  -sugar -salt  -eggs -mascarpone -lemon -blueberries -butter -powdered sugar

Mix the flour, baking powder and salt in a small bowl. 

In a stand mixer beat the mascarpone vegetable oil and sugar together. 

Add the eggs one at a time and beat between each.

Add the flour mixture and milk.  Then add the blueberries. 

Divide the batter between the two pans. 

After baking allow cake to cool completely. 

Make the lemon buttercream frosting. 

Assemble the two layer cake. 

Decorate with blueberries and lemon slices.
