Sweet Potato Muffins with Pecan Streusel Topping

Healthy sweet potato muffins perfect for fall. 


First you will need to cook a sweet potato.  I like to use a leftover one from dinner the night before.   Then mash with a fork.


Wet Ingredients needed:   – ¾ cup cooked sweet potato, mashed – ¼ cup pure maple syrup – ½ cup Greek yogurt – ¼ cup avocado oil – 1 teaspoon vanilla extract – ½ cup almond milk   


Dry Ingredients: – ½ cup oat flour – ½ cup whole wheat flour – 1 cup all-purpose flour – 2 teaspoons baking powder – 1 ½ teaspoons cinnamon  


Mix the streusel ingredients to add to the top.       

Add the streusel to the top of the muffins.

Moist and healthy muffins with a yummy streusel topping.
