Roasted Red Pepper And Gouda Soup

Make a quick and flavorful soup for a comforting meal or side dish. 

Ingredients:  -roasted red peppers -fire roasted tomatoes -butter -celery -onion -thyme -Italian seasoning -chicken broth -gouda -half and half

Chop the celery and onions.   

Add the onion and celery to a large pot with butter to sauté.  

Add the red peppers, tomatoes and chicken broth. 

Blend the soup till smooth using an immersion blender.

Stir in the cheese and half and half.  

The soup will be creamy and delicious. 

Eat with toasted baguette.  

This soup is easy to make and freezes well too.
