Coconut Milk Pasta Sauce

This easy vegan sauce is creamy and delicious for a quick weeknight dinner. 

Ingredients: -pasta -tomatoes  -shallot  -garlic -coconut milk -red pepper flakes -basil

Sauté the shallot and garlic in a large pan.  

Add the tomatoes and spices.

Once the sauce has simmered add the coconut milk. 

Stir in the cooked pasta and garnish with fresh basil.

This flavorful pasta is a delicious light dinner.
