Breakfast Egg Muffins  

These are perfect for meal prep for the week.  Egg muffins  are a healthy breakfast or snack. 

Ingredients:  -eggs - red bell pepper -cheddar cheese -sour cream -salt -pepper -garlic powder -chives

Chop the pepper in very small pieces. 

Sauté the red pepper until soft. 

Whisk the eggs in a large bowl. 

Whisk in the remaining ingredients. 

Portion out the egg mixture into the mini muffin tin. 

These are a high protein and low carb breakfast!

Mini egg muffins freeze well too!
