    Mango Popsicles {Vegan and Only 3 Ingredients}

    Making your own popsicles at home is not only easy but a great way to use up that fresh summertime fruit.  My recipe for Mango Popsicles has only 3 ingredients, vegan friendly and takes 5 minutes.  Whether you call them popsicles or ice pops, these fresh fruit popsicles are perfect on a hot day! The only difficult part is waiting for these homemade popsicles to freeze!

    I am always looking for different sweet treats to make for hot summer days.  Fresh mango paired with creamy coconut milk has the perfect combination of tropical flavors for my mango popsicles recipe.  Because of the natural sweet flavor of the ripe mango, there is not much sugar needed to sweeten this recipe.  I use just a bit of pure maple syrup for sweetening.  And by using maple syrup these are considered vegan mango popsicles, if you or a family member follow a vegan diet.

    • mango- you can use fresh or frozen mango
    • coconut milk- I used low fat
    • maple syrup- or substitute agave syrup

    I wanted these easy mango popsicles to be made with a few simple ingredients.  You can always add different things for flavor like lime juice.  However, I really like texture of the popsicles that the coconut milk adds to this frozen treat. They have an almost creamy ice cream texture that is different from most fresh fruit popsicles.

    How do you make mango popsicles?

    I use fresh mango cut into small pieces to make my popsicles.  I start by washing the fruit under cold water.  Then you will want to cut the mango away from the pit that runs through the center of the fruit.  If you have never cut a mango check out this step-by-step guide on how to properly cut a mango.  I remember the first time I ate fresh mango I was very unsure on how to cut the fruit. The pit in the center is very large so you will need several mangos to get the right amount for the recipe.

    Most grocery stores have fresh mangos available, however if you do not have access to ripe mangos, you can use frozen.  I would allow the frozen chunks to come to room temperature before blending.  Then follow the recipe as using fresh.

    After you have cut the mangos into chunks add them to either a high speed blender or food processor, along with the rest of the ingredients.   You will want to blend until very smooth so that it is easy to pour the mango puree into your popsicles molds.  You can use any kind of popsicle mold.  Some use a plastic stick while other varieties still use the wooden sticks.

    Once you have poured the mango mixture into the mold,  it is time to place the popsicles into the freezer for at least 4 hours.   My Vitamix has a pour spout that comes in pretty handy for jobs like this!

    After waiting patiently you will have your frozen popsicles!  Now you just need to remove them from the mold.  The easiest way to do this is to run the popsicle mold under warm water for about 30 seconds.  This will loosen them from the mold so that you can pull them out.  Otherwise you may pull out only the popsicle sticks!  This mango popsicle recipe is a great way to beat the summer heat!

    Ingredients

    • 2 cups mango, chopped into pieces
    • 1 ½ cups light coconut milk
    • 2 tablespoons maple syrup

    Instructions

    • Cut mango into small pieces.
    • Add mango, coconut milk and maple syrup to blender. Blend for several seconds. Scrape sides of blender and blend again until smooth.
    • Pour mango mixture into popsicle molds. Add popsicle sticks and place in freezer.
    • Freeze for at least 4 hours or overnight. When ready to eat run popsicle mold under cool water for a few seconds. This will help the popsicles slide out of mold.
