I love making this fresh summer veggie salad with lemon vinaigrette. It's so light and refreshing on a hot summer day! I am always so busy with juggling work and home that some days I just need something easy to throw together for dinner. If I don't have to turn on the oven then that's an added bonus!
I got the idea for this vegetable salad after going to a restaurant in the cute little downtown area my family and I recently moved to. This community is so quaint and charming that my husband describes it best by saying it's like Mayberry meets the beach. We love it because the small town has a great elementary school, a beautiful park, and terrific restaurants right on Florida's intercoastal. Yes, we can go for a jog along the water and then find a great place for lunch on our days off together! It doesn't get better than this.
One restaurant we discovered is known for their sandwiches but I was also very pleased with a salad I tried. The salad was a chopped vegetable salad loaded with fresh tomatoes, peppers, cucumbers and beans. They added chopped barbeque chicken and spicy mayo dressing. I loved the fresh veggies so I decided to make my own spin on this salad.
What vegetables can I use for a vegetable salad?
You can use any combination of veggies in this salad. If you have your own garden then use what you have on hand. Or if you love to frequent your local farmers market, use what is in season. I love using a combination of cucumbers, cherry tomatoes, and different colors of peppers. It takes no time to wash and chop the vegetables! My husband loves fresh UNCOOKED vegetables so I only needed to omit the beans to make this something he'd enjoy. But if your family likes beans you can definitely add either black beans or chick peas to the salad.
How quickly can you make a lemon vinaigrette?
To lighten up the fresh veggie salad I opted for a lemon vinaigrette with fresh basil. It's so simple to make and takes no time at all with my trusty Ninja blender! I just add the ingredients and give it a few pulses and voilà , fresh vinaigrette that has a delicious crisp flavor from the lemon juice and basil.
What protein can I add to make this salad a complete meal?
I always need to add a lean protein to make my salad a complete meal. If you are a vegetarian you can always omit it or add tofu. For this salad I choose deli turkey to make it a quick weeknight dinner! Just ask the clerk at the deli to cut a ½ inch thick slice, then you just have to cube it for the salad. You could also use grilled chicken or even grilled shrimp. I also love to put just a little cheese in the salad. I cube it just like the turkey. I usually use cheddar, however feta would work great too.
You have to try this quick and easy salad! It makes a great dinner or is perfect for meal prep for a few lunches during the work week. This light salad is exactly what you need to get bathing suit ready which I am constantly working on living here in Florida!
Fresh Summer Veggie Salad with Lemon Vinagrette
Lemon Vinaigrette Dressing
- 1 lemon, juiced
- 2 large basil leaves
- 6 tablespoons olive oil
- 4 tablespoons white balsamic vinegar
- salt and pepper to taste
- 2 cucumbers, peeled and sliced
- 1 pint cherry tomatoes, halved
- 1 red pepper diced
- 1 yellow pepper diced
- 1 can of corn, drained and rinsed
- 12 ounces deli turkey, thickly sliced and cubed*
- 3 ounces sharp cheddar cheese, cubed
- Add all vinaigrette ingredients to a blender and pulse to combine.
- Chop all vegetables, turkey and cheese and add to a large bowl with drained corn.
- Drizzle desired amount of dressing to salad.
